You can halve this recipe if you’re not serving a crowd, or you can freeze leftovers for another night. Serve over rice, in a burrito, or on its own as a side dish.

You can buy pre-made jerk seasoning at the store. But—making your own seasoning for this is another thing: the slow heat of building, layers upon layers of flavor, and the slightest hint of sweetness from a dash of sugar (which also helps the cauliflower crisp!). Make a big batch of this jerk cauliflower from Jordan and Clark Cord and the possibilities are endless. Put it in rice bowls. Put it in a salad with your favorite vegetables. Wrap it in a tortilla with all the fixings for a great lunch burrito or taco cauliflower jerk.

5. Jamaican Beef Patties with Cheese
Just like the original pancakes, these Jamaican “beef” and cheese pancakes from Rhea Parsons have a spicy filling of “beef” and cheese surrounded by a crusty, flavorful dough. They can be filled with greens, veggies, tofu, seitan, or whatever you like.
